Tonight, my sister and I enjoyed a lovely evening in and cooked up one of her dishes, a simple turkey and pepper dish that is healthy and satisfying.Turkey Green Pepper Boats
Ingredients
1 pound ground turkey
2 chopped jalepeno peppers
1 tablespoon olive oil
1 chopped onion
2 tablespoons minced garlic
1 chopped tomato
1 tablespoon crushed red pepper flakes
2 halved green peppers (seeds scraped out)
Directions
1. Saute onions with olive oil in sauce pan until translucent. Add minced garlic, jalepenos and ground turkey to pan. Cook until turkey is brown. Add tomatoes and cook for an additional five minutes.
2. Preheat oven to 350 degrees. Prepare halved green peppers on a baking tray. Scoop turkey mix into each halved green pepper on baking tray.
3. Heat in oven for 15 minutes or until warm. Eat and enjoy!
Add hot sauce if you would like an extra kick!

Skinny Chunky Monkey Cookies Recipe:
(Makes 30 cookies)Ingredients:3 ripe bananas
2 cups old-fashioned oats
1/4 cup creamy peanut butter
1/4 cup unsweetened cocoa powder
1/3 cup unsweetened applesauce
1 tsp. vanilla extract
Directions:
Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Bake 10-12 minutes.
Freezing Directions:
Cool completely, then place cookies in a freezer bag. Seal, label, and freeze.
